If they are really greasy its because there was to much beef or fat added to the meat.. I have made jerky sticks with lean beef before and it is very very greasy. I normally mix 1 pound ground chuck beef to 7 pounds venison and it turns out great. The only thing you may be able to do is throw it on a dehydrator and let it dry out a bit more but I would assume that unless you get it hard as a rock its just going to keep sucking out grease.
I also process and make sausage, jerky, burger ect.. At first I wasnt as picky about the silver skin.. I have always tried to remove all the fat possible and then If I need to I will add chuck burger or a small amount of beef fat.. I now trim as much of the silver skin as possible and have found that it does make a big difference in the taste. It will also add years to your meat grinder and you will not have to clean the tendons and silver skin of the blades every 2 minutes
First doe of the year for me taken this morning around 7:30 showed up 5 minutes after I tipped the can call a few times. 10 yard shot quick clean pass threw and was down within sight. Dinner on the tabble good luck to everyone out tonight.

I got one from farm and fleet that was very similar to gander mountains but a little bit cheaper and it has worked great so far easy to clean and the quality seems to be worth alot more than I paid for

the area by the pines is where I was thinking would be good to start and hand a stand as well as the right corner by the bridge there are tracks and trails everywhere under this thing it like compleatly matted down. I have never hunted by a creek so I was kind of thinking this would be the hottest spot because its like the only water supply in the area but im still new anyway thanks for the advise hopefully this season will be good to all of us.
Yes it is a sand/rock quarry anyways I will post a better picture tonight there is another wooded area that is a little big bigger that is on the other side of the highway otherwise the whole area is not huge or anything there are some massive tracks in some of the areas I have scouted. As far as the land owner knows it has never been hunted before as it looks as if it is only a sand quarry when you drive by
The game farm runs behind the property as well as the North East area basicaly everything outside of the red line is owned by them and you have to pay big monney to hunt it. yes it is fenced
