no the shank portion is not the Picnic.. the shank is still the rear leg. The Picnic is the upper front shoulder. next to the butt, which , is NOT in the rear of the pig, but again in the shoulder.
    Q. What’s the difference between a ham butt and ham shank?

    A. We get so many cuts of meat from a pig that it takes a lot of names to cover it all. Unfortunately, that also makes it confusing.

A ham comes from the upper rear leg, while a shank would be the section farther down the leg. But some hams are cut to contain a portion of the leg. Shanks also turn up as ham hocks.

The butt, usually called a Boston butt, comes from the front of the pig. It’s actually the upper part of the shoulder. It’s easy to confuse the terms butt and ham. To make it even more confusing, the lower section of the shoulder is sometimes called the arm picnic, a phrase that is sometimes associated with ham.

The shoulder has more fat and connective tissue than the rear leg, making it a great choice for low, slow cooking methods, particularly Carolinas-style barbecue.

my picnic ham came out as juicy as you can get.. it was all that I expect out of this cut of meat.. the best sweet flavor and the juice ran down your arm if you bit into a piece just to try it out..

I finally found my picnic ham at Walsteins on the south side of LaCrosse.. I am very very glad.. of course it was “mismarked” with a giant sign saying the price and the tag on the ham only being 28 cents a pound higher.. and it only took 45 short minutes to get a new price put on.. ( they have to contact outerspace to change the price to the sign that they have posted in the store..).. and it took a while for the phone linkup to kick in.. Telastar was in a bad orbit or something.. but I did get my ham..

I kept a couple of saugers in my bait tank in the shop and never had to clean up after them.. and never had to feed them either..( they were in the pike minnow tank).. and the last day of the shop I turned them loose at the boat launch..

well I have spent the whole week, trying between here and Rochester, to buy a picnic ham..yes .. its a “lower cut of ham” however.. it is much sweeter then any other ham on the hog.. and the guys from BBQ pitmasters say so.. what its not is pretty.. the leg or shoulder bone is crooked.. and you just can’t carve straight slices of it .. that being said.. pretty and tough isn’t as good as not so pretty and sweet and tasty.. some one tell me where I can buy a Picnic or a shoulder ham this week in either LaCrosse or Rochester.. thanks again for your advise..

Okay you get to yell at me… it took a while but I finally bought my own plow truck and since its my busiest time of the year.. I havent dealt with the truck at all. .I did see something on line that said instead of duel batteries to get a 160 amp alternator instead. they are priced under $200 which to me is cheaper the an extra battery and the iso .. thoughts ..opinions.. Ideas.. and yes.. instead of plowing right now I am CHARGING THE PLOW right now.. because as soon as I went to move the plow up or down.. the truck almost turned off.. so yes I deserved to be yelled at for not planning ahead and for just being stupid.. I plowed last week and had no problems.. but I must have used up the battery.. in just 15 minutes of plowing..
go ahead.. I am waiting. but opinions first.

please take note of the old original sloughs from the main channel west toward Minnesota.. it shows them as dots.. but there are no depths.. but trust me even my garmin and a very old chip reveals the depths.. and the channels. got to have them, and can’t use a chip with out them. .

go to the lower pool.. across from Stoddard.. there you will see that the mapping stops and miles and miles of river between the tracks have no contour”..

I was GOING TO BUY the Nav Upgrade chip to use here in LaCrosse .. but I went on their chat site first.. OH OH.. look out.. only half of the river meaning main river sloughs are mapped.. the whole Minnesota side is UNMAPPED.. and trust me even my old Garmin and an old Lakemaster chip had all of this .. I was reaching for the wallet when I found this out.. be very very aware of this. .keeping what I have and probably going to supplement with a hand held Garmin 5 or 6 inch gps..

don’t you find that a spiral cut ham dries out due the fact that it is cut and more areas are open surfaces? that’s been my experiences..

this is also really bad for our industry .. More competitors and not less is the sign of a good industry.. this is a very very bad sign.. for both fishing and hunting..

I had predicted for years that BASSPro would buy Gander.. but why wait.. Buy your prime competitor and watch Gander squirm in the breeze… like a nightcrawler on hot asphalt on a sunny day..

yes.. I have been BEGGING FOR FLEET FARM To BUY OUT Farm and Fleet.. I just am shocked to see this happen.. if they are looking to sell what is Farm and Fleet doing because they aren’t getting any of my sporting goods money.. Heck sometimes I drive 22 miles just to buy gas at Fleet Farm because the cash price is so much lower..

buy some senkos.. the REAL ONES>. yes they are expensive.. but they Catch fish.. you can texas rig both sides of them and then wacky fish them in the middle.. but the originals are soft easy to set the hook.. the gander ones you can use to hang sheet rock with..

My current true fishing partner is a kid going to college out of state.. so I have had to recruit new guys to fish with. .this weekend was my second time to fish with my son in law.. my goal was to teach him a plastic worm.. I have a very long stretch of river bank that we can throw a four inch worm on .. and catch a bucket full of short smallies.. so we went out. .and for the first hour or so we, meaning him, couldn’t quite get the feel.. he had fish on.. I put a senko on for him texas style.. but he had no feel.. I have three little rock points that I call suicide points. meaning that there have been schools of juvie smallmouths on them.. so we went there .. I never cast .. I just talked him through.. JUVIE SMALLIES.. GUESS AGAIN.. yesterday they were the REAL DEAL.. He put two keeper smallies in the boat lost three other.. One who thought he was the SPACE SHUTTLE.. because that’s about how high he jumped.. and then the kid put the BIG FISH FOR MY YEAR IN THE BOAT .. a real nice bucketmouth.. 4 pound plus.. and that spinning rod was bend in half and so was my son in law.. it was a day we won’t forget soon.. and He know can feel a plastic worm..

I sold tackle there to one of the previous owners.. he was a great kid and had the business for many years.. He felt GUILTY raising the price of minnows.. and he told me so.. . He had an unique metal tube were you dumped your cup of crawlers into and then funnelled them back into your cup once you saw that they were alive.. I hope that this doesn’t close.. but I have seen them all close ( mine included) over the years..

they were made back in the 80’s and 90’s.. ( old man from the fishing industry memory).. and I competed against them in the spinnerbait industry.. I also believe that Bulldog out of OHIO had some sort of drop head using wire and a football head way before football heads became the IN THING…

I recently cracked the head where it attaches to the shaft.. and I wonder if when I put the head unit back on, if there has been a problem.. I could feel heat coming from the top of the head ..
