    We save them all summer from some of the larger fish we clean and my wife fries them up now and then in the winter. They’re great snacks for football games and a nice change from chicken wings. They’re surprisingly good tasting.

    The place we stay at down in Louisiana serves Red Snapper throats. Very good!

    Very good eating.

    I usually take those out at the same time as the cheeks before I release the fish. Tons of meat on Muskellunge fins…

    I tried them on some Red Lake 16-18″ fish. They were good eating!
