    7 pounds of Swiss after a couple hours in the smoke. Should be ready right before Christmas.

    Mmmmmm, those look really good! Do you freeze them for future use then? How long are they good for?

    Dang! I have to start doing cheese. I love me some smoked gouda, such a smooth cheese, really really good in queso.

    We eat a lot of cheese and give some away as everyone seems to love it. Don’t freeze cheese, ruins the texture. When I do a big batch it will last several months in the fridge.
