Where to buy a Prime Rib Roast

    Haven’t been overly thrilled with the quality of meat last couple times I’ve bought prime rib roast from my usual meat shop. Looking for recommendations of somewhere else to try. Live in southern burbs but willing to drive a ways for quality. Would love to find a place with dry aged meat!

    Dry aged might need to be Beyerly’s or maybe Hyvee. Those are the only two I’ve seen.

    More important than where to buy, what’s the address where you’re cooking it? We’ll be right over toast

    Your local Meat Market may be willing/able to dry age for you on a special order, not sure if anyone keeps them on hand for a stop in purchase though. Costco meat has been very good, but I haven’t got a rib roast from them.

    Festival foods gets some really nice rib roasts. I’ve done a couple in the past and they’ve been awesome. I’ve even dry aged them myself.

    You can do dry aging yourself in the fridge if you have the space. The reviews on these have been pretty good.     You can dry age the roast in the fridge in the fridge without the bags but there’s a slight chance it might pick up a funky flavor. I followed Alton Browns dry aged rib roast recipe and it is awesome.

    Von Hanson’s gets my business. It is a little bit more expensive, but so far the quality more than offsets the additional cost. FYI, you can get on their MVG email list for some really good deals.

    We’ve been pretty happy with roasts from Costco. I think we’ve done prime tenderloin(get the unpeeled tenderloin and trim yourself to save some money), and rib roasts.

    I just can’t remember if the rib roasts were choice or prime…

    costco you can get full prime roasts which are perfect for dryaging yourself. we do one every christmas.

    Most Hy-vee’s have a aging clooer right next to their meat counter so you can see it in action and is all done in house.

    Dry aged at Beyerlys is the best I have found. Not the cheapest, but a real treat every so often. John in Eagan is the man if you live near.

    Another Protip, wrap the prime rib tightly in butcher’s twine before cooking, so that it becomes a symmetrical cylinder of meaty goodness.

    This will allow you to cook it perfectly medium-rare throughout the entire roast. The normal oblong shape of the roast usually causes the tips to cook differently than the middle.

    If by chance you are cooking to a temp other than medium-rare, well, my advice would be to cook something else you heathen!

    And reverse-sear that puppy!

    We get ours at gregs meats in hampton. But i have never ordered it dry aged. We usually just buy the whole cut. Great place.

    It’s like a good whiskey. Definitely for special occasions but damn is it good.
