    Cant believe I didnt take a pic but we made navy bean soup yesterday and it is DELICIOUS. Had it for lunch again today. Time to put the spoon down.

    Here’s our dinner ready to go to the stove and simmer all day…. Jambalya. There’s two pounds of 8-12/pound shrimp in there along with a pound of Italian sausage. Green peppers, rice, celery, 4 pounds of tomatoes, beef broth, carrots, Basil, oregano, thyme, onion, paprika and lots of fresh garlic.

    I have a loaf of Italian Bread ready to slice and butter with fresh garlic mixed in to toast. The sausage will give this the heat. Love the stuff. I make a huge batch so we can have it a couple times, then invite the kid over for lunch before we freeze the rest to enjoy again in a week or so.

    That looks tasty, Jimmy. I have a #13 boneless pork shoulder from Costco I grabbed for $2.29/lb on standby. We’re on day three of eating super simple pulled beef I made by cutting up a few pounds of chuck and letting it go in the slow cooker with a jar of hot giardiniera. I should be sick of eating the same thing for supper, but I’m not. I like to chunk up the pork shoulder and do a long beer braise in a 250* oven until it’s tender. I try to season it pretty simply, then I can take the leftovers in whatever direction I have a taste for. First up will be some sweet and sour red cabbage and dumplings. My mom used to pick up frozen bread dumplings like these, but I don’t see them anywhere I shop, so I’m going to try to make some.

    I made some jambalaya over the weekend for the first time. If I can recreate it (I did follow a recipe) it’s easily in my top 10 favorite dishes and may crack the top 5.

    Jambalaya is delicious, we use hot pork sausage and lots of jalapeños. We also add a pound or 2 of the tiny mini frozen shrimp the last hour of cook time. Serve it over rice or eat alone as soup. Delicious

    I made a homemade chili today since it’s cool and rainy. Normally I wear gloves when dicing the serrano peppers but I didn’t this time and BIG mistake! My hand is red and sore so I made a baking soda paste to help, and it did a little but not much! shock

    Happy to report that my first time grilling a pork loin filet is a success! Tastes just like Billy used to make! I’m really starting to enjoy doing my own grilling! toast

    Recteq pork chops, potatoes and some brown rice. With some spicy svens BBQ, the pork chops were cooked on a sear plate at 700 degrees for 6 minutes and were as juicy as they could get

    No damage at all, I love the thing, best investment I’ve made in a while. I’m debating on smoking a meat loaf tonight

    Do it! One tip. Last time I did one I made the loaf and wrapped in saran wrap and put in freezer for like an hour. Then removed the saran wrap and put it on the smoker. Freezing it keeps it together better.

    I feel like I’m on a roll here! Last night was my first time grilling chicken drummies and they were fantastic! John said they were juicy and delicious and he went back for seconds, so that’s gotta be a good sign! yay

    Chicken and charcoal are a match made in heaven! I like throwing a few apple wood chips on there too when I’m feeling fancy jester . And BC I’m having a real hard time putting off that Blackstone purchase seeing stuff like that…

    I’ve only cooked 2 meals on it now, and I’m really liking it. Can’t wait for a weekend morning when I’m home to make a huge breakfast. But it’s pretty rare I’m home on a weekend morning, usually gone by 4am.
