My mom and grandma made it when I was a kid with home grown cabbage. I remember watching them prep the jars and said, “No way that’s going to be sauerkraut”.

    Is that like Kielbasa?

Homemade kraut is awesome. I’ve had really good and really, really bad.

haleysgold…….yea one and the same…….had a spelling brain fart!!

this kraut tastes the same as the Franks.

pretty easy ……i chop the cabbage in a food processor being careful i dont turn it to mush. add a tsp of salt and hot water. let it set for a couple months to let it do its thing. then boil new lids to seal!!!!!!!

Picked up some weird pasta imported from Italy at Costco. Lumaca Rigata, meaning striped snail in English. Tossed the hot pasta in a bowl with chopped basil and tomato from the garden, finely grated garlic and some olive oil, salt and pepper. Topped it with parmesan. My favorite summer pasta dish. We’ll be eating cold leftovers for lunch today. I bet this pasta would make a fantastic mac and cheese. It really holds the sauce.

When my mom and grandma made kraut, they put everything in the jar, sealed it and it fermented in the jar.

i was told if you sealed the kraut jars right away, it killed whatever was in the cabbage to ferment or whatever it does???????

    how did it turn out???????

At least I thought they sealed it right away. I was in my teens so didn’t pay a lot of attention to it. It turned out great.

    From this link: https://blogs.scientificamerican.com/lab-rat/the-science-of-sauerkraut-bacterial-fermentation-yum/#:~:text=The%20first%20stage%20of%20sauerkraut,packed%20in%20an%20airtight%20container.

“The first stage of sauerkraut fermentation involves anaerobic bacteria, which is why the shredded cabbage and salt need to be packed in an airtight container.”
