Those look great. Too hot here yesterday to fire up the grill so I boiled up a beef tongue and chopped it up for tacos last night. I boiled it for 4hrs with onions, garlic, jalapeno, habanero, bay leaf, oregano, salt, pepper and some beef bullion. They were delicious. First time I made tongue but it won’t be the last. It was a picture worthy process but I forgot to take some.

Pulled pork on the kettle with charcoal and applewood chips last night, temp ran away for a bit so I wrapped the last 3 hours and it was the best and moistest pulled pork I’ve ever done.

I’ve made so many regular low and slow ribs that I can’t stand them anymore. So i tried the fast method with the charcoal vortex. I gotta say I like them better this way. They get a nice bark built all the way around them this way. I finished them with some sweet baby rays on them and grilled for another 10 mins.

I made local sweet corn and jambalaya yesterday. Forgot to take a pick but the jambalaya was amazing! I just bought the box mix, added shrimp (cooked with the rice), grilled chicken the day before and put some andoille sausage in there. Offdah that was good! I even brought a container of it over to the bartender and she was OMG that is amazing!

Blackstone fajitas tonight. A red, yellow and two green peppers with a couple onions. Marinated sliced sirloin for a few hours. I don’t measure but I used a little Worcestershire, soy sauce, salt, pepper, onion powder, garlic powder, chipotle powder, chili powder, cumin and olive oil. I haven’t made a fajita yet but based on the flavor and tenderness of the meat it’s going to be the best ever.

We ate until we were stuffed. I think I had bought 30 legs. They were excellent, and I’m a super picky eater. We had 8 legs leftover and went campsite to campsite to give them away. Managed to give away 5 of the 8 and we finished the last couple. Definitely gonna have them again.
I won’t say the ol cliche about trading like chicken. They were different than chicken and maybe even better. toast
