Did shrimp tacos with a cilantro and roasted pablano pepper salsa, giant red Chilean shrimp and some fixings. Most delicious

    Da 3# Heart Attack Meatloaf!

    1 1/2 lbs hamburger
    1 lb Italian Sausage
    6oz Heinz Chili Sauce
    1 medium Onion diced
    1 green Pepper diced
    2 eggs
    1 cup dried bread crumbs
    1 tsp salt
    1/2 tsp pepper
    1 cup shredded sharp cheddar
    1 tbsp Worcestershire Sauce
    Bacon or SIDE PORK
    Brown sugar

Mix all together and form loaf. Cover with bacon or side pork and then drizzle brown sugar over the top.

Bake at 350 degrees for 80 minutes, on a rack above a greased casserole pan to drain grease as it cooks.

Kick heat up to 425 and cook until internal temp of 165 degrees. (15-30 more minutes usually)

When internal temp is reached (165 degrees) then let sit on top of cool stove to set another 30 minutes before serving.

Not dinner but we have a new grocery store in town and some of their specials are out of sight. Last week they had bulk cojack cheese at $1.99/pd in random chunks. The stuff was incredible. This week its sharp cheddar at the same price in random chunks and I’m here to tell ya that this stuff is great. I have no idea who the cheese producer is but this cheddar has got to be aged for a year. It’ll be a good thing when we run out of this stuff because its too good….all I do is snack on the cheese. Like I am doing right now. This has to be a cardiologist’s nightmare. Its that good. One more slice then I’ll go in for the ecg.

    Biscuits & Gravy from scratch.

I usually add the onion & green pepper into the gravy as I make it but our daughter and grandsons specifically requested my B&G (sans veggies). Probably the best thing I make on the stove.

I did double duty on venison ring bologna and sauerkraut last night. Raw fries finished the meal.

The deep fryer is still taking up space on the table. I may put new oil in it and whip me up a pile of potato chips to go with a lean burger tonight if Taco Salad doesn’t flip Ma’s switch.

Dinner for tomorrow night and maybe a couple of more.
There are three racks there. One will get cut into thirds and added to the freezer for a few future lunches.

Ribs sound & look great Denny.

Cooking & eating like we do, I thought the scale was wrong Wednesday when the doc said I lost 18# since my December check up. I have been drinking light beer tho!

At least your doc noticed you lost! I’m going on an elk hunt fall of 2020, so since November I’ve been eating better and have also been doing a lot of walking to get ready. I’m down almost 35. When I had my yearly checkup a couple weeks ago, my doc never even mentioned it.

Some doctors must just be so swamped that they don’t care or don’t catch changes like that ? I’m still a little on the Bubba side but going down can’t hurt …..wife agrees!

Our tradition for the kid’s Birthdays is they get to pick out their meal. Last night was Jason’s turn.
Boneless leg of lamb, roasted carrots & potatoes.
These carrots are the best I’ve ever had. I’ll get the recipe posted soon. Seriously, they taste like candy!
