Baitwaster. Welcome to IDO. A friend introduced me to those at Deer Hunting camp last year and they are delicious. Looks like you nailed them. His had a bit more bark on it, he did them in a Traeger.

I also heard if you leave the bacon out there called Texas Twinkies. But why leave the bacon out?

Yes! Reminds me that I haven’t made a smoked fatty for a few years. Make a bacon lattice, layer on any kind of ground meat, pile up cheese and anything else you want inside, then roll it into a log. Gotta love smoking a fatty.

That lineup of sauces looks like the TV show “Hot Ones” where they interview people while having progressively hotter wings.

My wife looks at me like “really?” when I bring home another bottle of sauce. Door of fridge is already full!

That’s my favorite thing to do. Can’t have enough BBQ, hot sauce and every blend of both.

Last night I grilled up some beef tenderloin chunks, asparagus foil pouch with Amish butter, and some mashed taters topped with the juices from the resting steaks. Stella the Cavapoo and Steve the Pompoo, not pictured, had some too. We each ate one steak and saved the rest for a nice healthy breakfast. On a crusty loaf I generously buttered each half and made sliced steak and mashed potato hoagies right after morning coffee. Great time at the camper.
