Dinner at our son’s place, he made short ribs with red wine reduction, mashed potatoes and roasted asparagus. The boy is a better cook than his old man, it was fabulous. Then mini-layer cake carrot cakes with cream cheese frosting made by our daughter-in-law. Ridiculously good. Probably shouldn’t eat for the next few days.

Tried a new way to make steaks. I laid down a bed of onions, 4Tbs butter and pushed the steaks in like smash burgers. Happy Easter all.

Had pretty much the same meal today. Easter ham and cheesy hash browns. Makes good leftovers too.

Leg of lamb stuffed with garlic cloves, mashed potatoes and gravy and steamed broccoli here. It was so good, I only got a pic of the aftermath.

My wife is trying the whole keto Diet thing. Anyone have any good recipe’s that are Keto? This one is going to be tough on me. I’m not a low Carb kind of eater. We both need to get in better shape and a diet seemed like a start. I told her I’d eat whatever she cooks. Seems like Chicken is real common in Keto meals, At least I like chicken so that’s good.

Eggs are big as well in keto, and you can put meat in them. Salmon, avocado, pork, limited red meat. And most veggies and some cheese are all a green light.

Breads, potatoes and rice are the hardest to give up. I have not done keto to the letter but have been on low carb, low sugar diets. I’m normally not a sweet tooth but found myself craving straight-up sugar. If you can stick with it, it works. I saw a great quote online the other day… “I try to be disciplined, but I’m the boss of me and that guy runs a LOOSE SHIP!”

Eggs are good. Both the wife and i eat a ton of them. I just boiled up a doz. this morning.
Salmon is out. I love it but the wife hates it.
Avocado – Another good one. Love those things – Hate the price of them.
Breads, potatoes and rice – This is going to be the tough part for us. I love potatoes and rice and my wife loves Breads.
Pasta is also going to be another tough one. Both of use love Pasta
