    Glen, I’ve had a tough time with Brussel sprouts but know they can be good. Been yrs since, want to try pan searing in olive oil for that exterior crunch & then garlic butter on top. Have you tried that & was it good?

    Pork Spare Country Ribs, corn in the cob and garden cukes in a creamy dill sauce. No pics of the whole plate. These ribs are awesome and I recommend getting some from your local meat market. You can smoke them low and slow, or fast and hot like I did last night. Dry rub, charcoal and applewood.

    B.C.TS. Like a lot of folks we are up to our ears in cucs and tomatoes. New twist on the BLT, bacon, cucumber and tomato sandwich. Trading out the lettuce for cucumber adds moisture and flavor. New favorite at our house.

    Probably my bet year for cucumbers but ive only picked 1 roma tomato so far and nothing else even looks close.

    Home made pizza crust is easy and tastes better.
    1 package yeast (2 1/2 tsps)
    1 cup hot water (not boiling)
    1 tsp sugar
    3 1/2 cups flour
    1 tsp salt
    3 Tbsp olive oil

    Add yeast and sugar to water, set aside.
    Measure flour and salt into a large mixing bowl. Add dried spices if desired – I add basil and dried onion.
    Mix yeast mixture into flour mixture and stir until flour is mostly incorporated.
    Add olive oil. Stir again.
    Drop dough ball onto a floured countertop or cutting board. Knead for a few minutes until the dough begins to stretch.
    Put dough into a greased bowl.. Cover with a dish towel and set in a warm place.
    After dough doubles in size, knead dough for a minute.
    Place back in bowl, cover and let rise again.

    Portion the dough out according to your tastes. I get 4 thin crust pizzas out of a batch of dough. Wrap portions in plastic wrap, place in a sandwich sized ziploc bag. Dough freezes well.

    Take dough out of freezer to thaw mid afternoon. Roll on a floured surface.
    Cover with sauce and toppings.

    I make sauce from crushed tomatoes, the whole enterprise is surprisingly simple and allows us to control the amount of salt in the pizza. Cheese is salty but sauce is not. We live a block from a Broadway Pizza, can’t eat it any more because it is too salty by comparison.
