    I gotta really try skin-on scaled sunnies again. I had a bad experience when I was about 4 yrs old getting a scale stuck in the back of my throat. I’m sure it was no big deal, but as a 4 year old I thought I was dying. That’s the last time I’ve ever eaten skin-on sunnies. I shouldn’t deny myself this flavor years later just because my dad sucked at scaling fish!

    waytogo waytogo we use what they call a cyclone, or scaling pail. Hook up a drill and 3 minutes later 20-30 sunfish scaled.

    We do however go back after there filleted out and scrape the skin.

    Coated some wings in Cimmaron Doc’s Sweet Rib Rub last night and let them marinate 24hrs. Cooked them indirect with Kingsford and a chunk of applewood. Rehydrated about a cup of dried morels my sister gave me in two cups of hot water and used the water to make some jasmine rice with frozen peas and basil from the garden and a little salt and pepper.

    Grilled pork tenderloin and leftover morel rice last night. Made two tenderloins so we’re having wraps with homemade tzatziki sauce tonight.

    You and I think alike.
    Mine was thin sliced bacon wrapped pork tenderloin put in my smoker and then reversed seared on the grill when the husk on corn was 1/2 way done. Pulled and tented the T-loin and finished roasting the corn.

    Being a transplanted F.I.B., living the dream here in central WI, I may not have the proper terminology , but thought that was called a hot dish over that way. Boy, I still have a lot to learn after almost 20yrs here. blush

    If you were asking me, I combined about 1-1/4 cups of plain yogurt, 1/4 cup of tahini, 1/2 teaspoon of apple cider vinegar, one finely minced garlic clove, 3-4 tablespoons of finely chopped dill and a little salt and pepper to taste. I’m sure it was one garlic clove, but I didn’t really measure anything else.

    Finally got a decent number of tomatoes this morning. Making one of my favorite summer dishes tonight. Couldn’t be simpler. Boil your favorite pasta and drain, toss in chopped tomatoes, olive oil, chopped basil, crushed garlic and parmesan. Tomorrow will be the first BLT’s of the season. NO MIRACLE WHIP!

    We were gifted the candied jalapeno’s, so you will need to track those down. But just chopped them up and added them to the regular cornbread recipe and mixed honey w/ soft butter.

    Spatchcocked chicken that was dry brined for 5 hours. Smoked on gas weber with applewood chips in foil pouch for 3.5 hours. Paired with a side salad and batsquatch. Yum.
