It’s been a while since I tried a new recipe, so tonight I made a Rustic Beef Stew in the InstantPot! I felt lazy and figured – it’s a stew, no need to measure! – and I just tossed in a mixture of stew meat, little potatoes, diced tomatoes, onions, and baby carrots with some seasonings and spices! It’s delicious and perfect for chilly weather. 😋

    Recipe please.

    here ya go………..

take a ham bone…….boil it up to make broth. i add extra leftover ham. boil till meat comes off the bone.
    ingredients….
    1-can garbanzo beans
    grates carrots.to your liking
2 diced potatoes…..about an inch square
    boil till veggies are done

add……..2 polish sausage cut up in small pieces
6 slices of bacon….raw cut into 1 inch pieces
    2 cups shredded cabbage
i also add celery and onion.

some extra side notes………. i take a 1 lb package of bacon and cut in half to use. i also lightly fry that up to get rid of some grease.

i use this as a guide…….depending on how big the ham bone is i add extra of all the ingredients except the garbanzo beans until i like the way it looks. i always also use a good meat counter polish, not the cheap crap.

cook/simmer for a bit then enjoy!!!!!!

Simple recipe: any baking dish will do just have cut tortillas to fit the dish

4 chicken thigh cut up and
    cooked

    1 onion diced
    1 green pepper diced
    1 one can of jalapeños
    8oz package cremini
    mushroom
    Quartered
1 or 2 8oz package of Mexican shreaded cheese
    1 can of black beans
    1 package of taco
    seasonings
    1/2tbl Chipotle powder and
    Ancho powder
    4 roma tomatoes large diced
    1 avocado large diced
    3 mission wrap soft
    tortillas or
    enough tortillas for 3
layers for pan i like the
    large thin ones.

Cook chicken as per directions of taco seasonings package also adding Chipotle and Anchor
    Powder

Remove seasoned cooked chicken set aside

Lightly oil pan, line pan with tortillas
Add each ingredient on top tortillas.
    Repeat two more layers

On the grill use indirect heat with temp 375 for 45 minutes or when Tomatoes on top are cooked a bit chared be ok i got impatient this time.

Some use salsa wich you can use or canned tomatoes.
But diced fresh tomatoes and the muhrooms ad just enough moisture to meld everything together. Avocado helps bind everything together

The steak looks delicious. The a1 must be fore the potatoes. No way a steak that looks that good deserves to be dunked in sauce.

sinker……..where are you finding some of those seasonings?? we’ve looked a several stores and nothing. seasonings are in general really tough to find right now. in particular the cremini, ancho and chipolte powder???

I live in a small town and can usually find Chipotle Chili Powder in our Coborns, but not Ancho, which is frustrating – I LOVE the flavor of Ancho Chili powder. You can usually find BOTH Ancho and Chipotle powder at a SuperTarget or Walmart spice section. Cremini Mushrooms are just a size classification of plain white mushrooms that you buy in the carton. Small ones are often called “Button Mushrooms” and the large ones are “Portabella.” In the middle is Cremini but really it’s just a fancy name for common medium-sized white mushrooms that every store probably has.

Anyway, I’m sure the above recipe would work great with regular Chili Powder to, But Ancho and Chipotle would definitely kick it up if you can find it.

The grocery store i go to sells bulk spices in small bags. County Market in Hudson wi. If you have one of those organic coop stores around chances they sell bulk spices.
The cremini mushrooms “mini-bella” I get at Walmart.

The cremini mushrooms “mini-bella” I get at Walmart. I find they hold up better and have a better flavor then the white burton mushroom

So tried something different with my fish tonight, and it turned out great. Baked sauger from the Mississippi with a gold fish cracker, parmesan crust. With steamed broccoli. Doctored up uncle bens rice, with mushrooms, sliced water chestnuts, campbells French onion soup, and beef broth. my favorite side dish with any game or fish.
Also, my 18 month old, and 3 year old son’s loved the fish with the gold fish.

Same as any holiday or busy weekend- stayed home and cooked. A little ribeye from the angus 1/4 I get every spring. The stuffed shrooms and twice baked oozed out and got a little sloppy looking but they tasted just fine. Thumbs up to the quality/size of snow crab Fareway had on sale last week.
