    You got my attention Gino- looks and sound fantastic !

    My 5 yr old electric (glass top garbage) stove took a crap on 12/24 so I bit the bullet and had the plumber put a gas line up to the kitchen for me, so I could get back to a gas range.

    We’ve been cooking 2 meals a day out under the covered deck, on the gas grill outside since 12/24. Still eating good and no sweat.

    Today I got the new beast installed myself! We had spaghetti & garlic toast and I’m just tickled to be back cooking with fire again in the house!! Never going back to electric now!

    Thanks Thomas, this stuff is fantastic. I save my cheeks all year and get to enjoy this once a year.this is my third year making it . Nice looking stove ! I too cook with gas and could not go back to an electric range

    Shore Lunch brand wild rice soup- I added 1 1/2# of cut up pressure cooked chicken breast. If you haven’t tried this soup mix from Menards yet, it’s the real deal! This was my first time ever trying this soup mix.

    We’ve been using these Shore Lunch soups as a quick alternative to making soup from scratch, and they are pretty good.

    We had broiled Red Fin Lake Trout fillets for dinner last night and those suckers were primo. I never thought to take a quick picture as they came from the oven, sorry. Skin side down in a cake pan, brushed with olive oil and given a small shot of seasoned salt. Broiled for 8 minutes on a middle shelf.

    I’m not much of a cook. I like to bake, but cooking actual meals isn’t my thing. But tonight I felt like making an old staple in my house which I can actually cook – SPAMaroni! Which of course is cubed up SPAM and mac n cheese. Can’t go wrong with this! Of course I should have done some garlic bread too. Next time.

    Did 11 racks of ribs in the smoker today …. 7 for us & 4 racks of my neighbor’s in too. They were done to “fall off the bone” . The only way to do ribs. Smoked with apple wood from the neighbor. Might have went thru some beer & apple pie too. What a great day to smoke a pile of ribs.

    Fish fry is looking good for next week.

    I made a burger tonight for dinner! Using my new George Foreman Grill for my birthday, of course! Would you guys believe I’ve never made burgers before…? 😂 I may have used a meat thermometer to make sure it was done AND also sliced it in half to check the insides for any pink. I’m not used to cooking meat. 🤷‍♀️

    The burger patty I pulled from the freezer (Billy made a bunch of homemade burgers earlier this year) and the broccoli is from our garden. It was fantastic and a bit more satisfying than mac n cheese, I’ll have to admit. 😉

    160 internal temp on the burger is USDA, I don’t like going that high for ours, I grind all my own burger meats too.

    Tonight for dinner I made my first InstantPot meal! Billy loved our InstantPot and used it quite frequently. I didn’t pay much attention on how to use it so I recently took an InstantPot Basics class. I decided to start simple and make mac and cheese and it was a snap! It came together in less than 10 minutes! This recipe calls for “two dashes of siracha sauce” and I wasn’t really sure how to interpret that so I just squirted a glob of siracha sauce into the pot and it’s quite flavorful! 😁

    I always add some franks red hot to my Mac and cheese. Even for the kids. Adds some good flavor.

    Made these tonight. Sauté with s&p and a healthy dollop of bacon grease. Top with honey and balsamic. These ain’t yo mommas Brussels sprouts.

    I’ll be trying the steak fajita and the chicken & rice casserole.

    We had thin sliced, then baked pork loin chops in Italian dressing w/ Baked asparagus. Probably as healthy a meal as I’m capable of.

    biggill, looks like you season as described and turn them down on the cast iron till browned and tender then flip them and add the balsamic and honey?
