    Recteq meatloaf, some pan fried diced up potatoes and cheese rice. The meat loaf was great, one of the better I’ve made.

    Guess we are having what I believe is a javelina. I’m not at the ranch yet since I came down with influenza A and will be up there today. Missed out on the fun. It might be a small wild boar but idk.

    Yesterday’s left over bakers turned to fried potatoes tonight with some fresh crappies.

    Yesterday we had crab legs, filet mignon, shrimp kabobs, big salad and more. Forgot to get a final product pics yesterday

    My new years day meal. Prime rib done on the pellet grill, Twice baked potato bake, and colored cauliflower. First time trying the colored Cauliflower or Twice baked potato bake. Both were yummy. The prime rib turned out excellent. Did the reverse sear in the oven.

    I’ve never had Wild Boar, but would love to try it someday. I like trying new things to eat. Watching cooking shows my wife always say’s I would not try that. I always say I’d try that.

    I grew up in AZ and had one particular uncle that would hunt Javelina’s. I feel like he got one every year and would have an underground pig roast party in his backyard. I was just a kid and had zero knowledge of hunting then. But I remember the parties and seeing that huge menacing hog and eating it, and it was phenomenal! I hope you get another chance to try some without getting sick!

    john, this is what she said.
    ingredients….
    1 lb burger we add onions to the burger
    1 large can enchilada sauce her recipe calls for a can of tomato soup…we dont use it hence the large can of enchilada sauce. there are different sauces she prefers the mild!
    taco seasoning
    shredded cheese………we use the mexican blend.
    browns burger with the taco season….following the directions on the package.

    put burger in soft shells large ones, add cheese!.makes 6. dump sauce over the top. bake at 350 for 1/2 hour to 45 minutes!!!
