Daughter says I should go into work late every morning. National signing day today. She is off to UMD for pole vaulting. I thought I’d start her day off with a big breakfast.

Captain cokes and a Mexican honey from in deed brewing this morning
Hard to believe a 1.75L bottle of whiskey or gold label bat juice lasted me 2 nights, & was that way every night for quite a while. Thought it’d be hard to cold turkey that but did, almost a year now. Cirrhosis damn near killed me & life now is day by day, but feel it saved me. I’ll get off my box now but my belly is fat, full & happy after breakfast today! Eggs Benny is my 2nd fav breakfast, 1st being fresh caught deep fried boneless fillets
I had a hankering for pancakes yesterday so I made some homemade pancakes for breakfast! 😋 🥞
The recipe I use is simple, but I love it because I can easily make just a couple of pancakes rather than a whole stack!
Breakfast/ brunch!!3 eggs, lotz of onions and ham with pepper jack cheese.
I went to a cute place in Bloomington with my MeetUp Group the other weekend and we went to Taste of Scandinavia… delicious food and friendly servers! Its entrance is in the Festival Foods grocery store, which threw us off a bit, but it is a nice place! I had been craving some french toast and it was fantastic!!
Looks great Sharon, however they burnt your bacon. Lol. Main reason I don’t order bacon when I’m out they always overcook it IMO

You can’t overcook bacon IMO! I love it super crispy and so done that when you bit into it – it explodes into bacon ash in your mouth!

When I was a kid it had to be burnt, not now.
Home with the kids on the snowday so plenty of time to make breakfast. Day one was homemade cheesy biscuits with venison breakfast sausage gravy. The kids don’t like it but I like a runny egg topper.
Our house is also torn on crispy vs medium bacon.

That looks GREAT!
I like my bacon medium rare, wife likes it crispy. So we compromise and have it crispy.
A tip on bacon. If it’s not a thick cut bacon twist it, lay it on a foil lined cookie sheet, in the a preheated oven at 425 till done to your liking. Usually 20 to 30 minutes. The bacon ends up part crispy, part chewy. Satisfies most everybody. Extra thick bacon is hard to twist and put on cookie sheet unless room temp.
i always make my bacon in the oven also. i line a cookie sheet with tin foil and lay it flat on there. comes out great every time and cooks consistantly

I have done it that way for years. Another trick is to cover the pan with silicone baking sheets to avoid having the grease splatter all over the oven. I take 2 thin pieces of aluminum and lay then across the middle so the mats don’t sag into the bacon. My baking pan is about 2 inches deep as well.
