How long do you keep that on the smoker?
Until it’s done.
But seriously it’s always different especially with charcoal and cooler weather. Usually I’m checking after 5-6 hours, but I run hotter than most people too (275-300ish). Today I couldn’t watch it all day
, so I smoked it for 2 hours then put it into the oven at 300 for 4 hours to finish.
