Going through the freezer and remains of our quarter beef. Found a pot-roast. Not in the mood for taters and gravy due to the heat. Thought I’d try it on the Treager. 3 1/2 ours on the rack un wrapped. wife was afraid it would be dry. So, I put a stick of butter in the foil under the roast and grabbed some apples off the neighbor’s tree and sliced on top. Tight wrapped and ran it to 204 internal temp. Then about a 45-minute rest at 180. Best roast I’ve ever eaten. Couple nights later did a couple reverse sear porterhouse. Pretty good as well.

Cottage bacon. Just in time for BLTs. No nitrates either.

Didn’t bother posting pic of another couple racks of baby backs. But I did try something new. First attempt at baking in the smoker. Peach Crisp in the Treager. It was fantastic. With that said, it would have been fantastic out of the oven. Didn’t get that big wood fired taste. But the top did crisp up very well. The brown sugar and 2 sticks of butter made that chewy caramel ring around the cast iron that I love.
