    Christmas Eve dinner has always been a wild game feed for our family. We don’t hunt deer, but we’ve got ducks, geese and pheasants.
    Duck (Wood Ducks and Mallards) is in marinade now, and will be wrapped in bacon and grilled tomorrow. Goose breasts are in two different batches of marinade, one is the same as the duck, using sweet soy sauce base, and the other is more like a Worcestershire based steak marinade. The geese will also be wrapped in bacon and grilled.
    The pheasant is prepared two ways. One batch is slow cooked with a cream sauce, and the other is baked with a peach glaze.
    My dad will also be baking a ham, since we have some guests who won’t eat the wild birds (more for me).
    For sides, we will have Wild Rice Casserole, consisting of long grain & wild rice, Jimmy Dean Sage sausage and some cream of mushroom soup mix. Then there will probably be some other stuff that’s only there to keep us all from looking like a bunch of bloodthirsty carnivores – I’ve long since, given up denying the truth, so I’m not 100% sure what those other items may be.

    Prime Rib and King Crab

    I live crab legs. A number of years ago stopped at a casino in turtle lake and they had a buffet with king crab in it. We put a real hurt on them.

    Prime rib Christmas eve and ham Christmas day. Venison summer sausage among other appetizers, but would be fun to mix in more wild game or fresh walleye.

    Fishthumper haven’t opened them yet. Going to have them for appetizers Christmas Day. We used your original recipe and added garlic gloves and red and yellow peppers. I’ll let you know how they turned out. Grandson has been eyeballing them in the fridge the last couple of days. But we both decided to wait till Christmas Day. Our own little present to open.

    Slow cook a top round beef roast with a smaller venison roast, taters, onions, carrots, and mushrooms. A 3 day meal for this guy.

    My wife’s lasagna and cheezy garlic bread. Smoking country style burnt end ribs for an appetizer. Windsor dCokes and fade off into the sunset. Perfect.

    We do meatballs on Christmas Eve and Prime rib on Christmas day. Wife and I will be alone on New Years so it will be lobster for us. Other family members have an allergy to seafood.

    My wife’s family revers their Grandmothers porchetta recipe on par with the bible.
