EC Angler, the best way I have found is to breast the duck out and cut breast meat into 2 inch wide strips. After cutting meat roll cut meat and wrap with bacon. If you like it spicy add a jalapeno pepper that has been cut in half and seeded. We also like to fill our peppers with cream cheese. Grill on medium heat, we have found that when the bacon becomes crispy it is time to eat, dont be surprised if this duck tastes like filet mignon. (any duck)

There was a post2 or 3 weeks ago on this same subject. I believe that it was in the waterfowl forum. Many good recipes there. If there is somone who can link it that would be great.

    Duck soup…

In a large kettle add water to 3-4″ from top of kettle. Add 4-5″ garden stones and 2 ducks (plucked, skinned, breasted – your preference). Bring to a boil and simmer until the rocks get soft. Remove the ducks and broth and discard both. Eat the rocks – salt and pepper to taste.
