Following up on my thread about my need to have ultra low sodium sausage made from my deer. I simply cannot have the amounts of sodium found in common spice blends used in sausage. Waaaaaay to much sodium per serving.
The place that is making my sausage agreed NOT to use their regular MegaSalt seasoning blend in my sausage, if I provide the exact amount needed of the seasoning blend that I want to use.
Is anyone willing to share the recipes for the seasoning blends to make:
1. Summer sausage
2. Sausage sticks.
3. DeerWurst (venision bratwurst)
To be clear, I only need the seasoning blend. I’m not asking for instructions or your smoking secrets, just the blend of spices needed.
