Venison Summer Sausage

    We made 130 pounds between my buddy and I. Also made 5 pounds of snack sticks. Some traditional but most were jalapeño/cheddar. Turned out amazing!

    Nice work. What did you use for your recipe? My brother and I did 25 lb of summer sausage and 50 lb of brats last weekend. We used up some LEM backwoods seasoning kit he won from something. I prefer mixing my own so I can doctor the recipe as I go. We are making some of the brats up tonight for dinner. I am sure they will be good.

    Awesome work! One of my favorite things to do. The second I walk up on a dead deer I’m thinking of all the great stuff I’m gonna make. It’s a great way to get the deer camp group together throughout the year to make a batch or two and drink some beers.

    Yes, they were smoked. I used the Backwoods seasoning. I really like that one. When I do brats, I have done it both ways. Two hours of smoke and no smoke. Not sure what I prefer yet. Sometimes smoking them is just a hassle.

    My buddy had never done them before so I showed him how to do a small batch. I just did summer sausage on this run. He is already wishing he had done more.

    Sometimes smoking them is just a hassle.

    We smoked the summer sausage and not the brats. The brats will be fine if they are cooked all the way. We have smoked the brats before and felt it was not worth the extra effort. They always can be smoked before I grill them if I am looking for that.

    Cold smoked. Not hot smoke. No cooking in the smoke. Just flavor. Like the ones I brought on the Croix that day.
