Venison sausage price

    For those that get brats, polish, sticks etc made from a business; what is a typical poundage of venison needed for a batch? How does the price work: based on weight of venison or final weight of product?

    I’ve seen 15 and 30 lb batch limits and pricing go both ways at the 2 places Ive tried. Just curious what other people see.

    The place i dropped my trim off at was a 10 pound minimum. But they do mix 50/50 with pork or beef so it would be only 5 pounds of ven. Prices vary based on sticks or summer sausage or whatever you get though.

    any place i’ve taken my trimmings is either a 10 or 15 lb minimum on the venny trimmings……..then they add beef or pork. everyplace is different though.

    and the minimum depends on what you want!!!!!!

    What about price? Is the total based off the initial trimmings weight or final weight after addition of beef or pork?

    Hope you can read this, it was done 3-14-2020, so a 2019 deer. It’s the last time I brought venison in to get processed so I’m sure prices went up. It may say beef and veal but it’s venison.

    I cut the cost down by doing my own wrapping and throwing in the freezer.

    One thing I always do is wait till the initial rush of bringing my venison in until late Dec, first part of January.

    Thanks Glenn! It appears you pay per pound of trimmings. I guess that’s how I would expect it. I think the place I am dealing with now is the outlier which charges per total weight. I understand the price per type of meat will vary.

    Like if it is a 20# minimum and I want cheddar brats at $4/lb, is the final price 20×4= $80 or $4 times what ever the final weight is with trimmings, pork and cheese?

    The place we go to includes the pork towards the batch. so we would get back 20 totals pounds for $80. some places may be different though?

    so if you wanted 20lbs and they add 30% pork then it would take 6lbs of pork and 14lbs of venison to make the batch if that makes sense

    My locker charges $100 to debone and package the deer. $.30/pound to grind with 5% beef tallow and i think the sticks and sausage are $2.90 a pound, something like that.

    Where I went this year the price listed was per pound of venison used towards that item: burger, sausage, etc. For pork mixed in with the burger, you pay the rate listed for the pounds of pork used separately.
