Venison bacon.

    Any one make this ? My buddies dad swears by this seasoning and recipe. Looks simple enough so I figured why not ? Any one else make ven bacon, have any other seasonings to recommend or does any one have experience with this place ?

    We don’t make it but have McDonald’s meats in clear lake make it for us. By far the best we’ve had. They slice it then so it crisps up nice, so that would be my one pointer

    Buddies dad just told the kid and I to join him in the sausage making fest. His pole shed is the equivalent to a butcher shop. He has the nicest equipment I’ve seen privately owned. So that will be awesome. Typically we do it all in my garage which makes for a full day or 2 when we turn 6 deer in to all the goodies.

    Not looking to argue or bash anybody, but just make your favorite summer sausage and slice thin n fry it. I’ve been doing that for 20+ yrs, basically the same as any venison bacon I’ve ever had. If there is some other secret or method that would be great, I would definitely like to try it out.

    It’s easy to make, you essentially make a loaf out of ground in a pan, smoke it, then thin slice it or at least that is how I did it. This and summer sausage are prolly two of the simpler, but delicious, items to make.

    This is kinda where I’m at on this stuff. Maybe I’ve never had any that’s really good but to me it just tastes like any other sausage in a different shape. It all tastes great but There’s no substitute for real bacon.

    back when we were camping we took sliced summer sausage and roasted it over a camp fire for a snack!! very tasty!!

    Circle pines sausage makes a great venison bacon.

    Last year I made Franks, and the leftover grind that didn’t get pushed out, I put in a loaf pan and smoked. Sliced it thin and pan fried it, and realized I just made my own venison bacon!

    I’ve made it a couple times, I bought the Venison Bacon mix from Curley’s Sausage Kitchen in Iowa (via the internet) – OUTSTANDING and honestly pretty easy to make. You mix it up just like you’re making summer sausage, but then I just lined a 9 x 13 baking dish with plastic wrap and formed it there, let it sit in the fridge overnight to cure and harden-up a bit, then removed the slab from the pan and plastic and smoked it the next day.

    It is very good. I make it out of snow geese but have eaten a lot made out of venison and it tastes the same. I used curley’s recipe as well. Looks like they may be out of business.

    Anyone know if they went out business?

    Bummer. They had good stuff. James let us know how P & S is. I have about 100 snows that I will be processing this winter some time.

    I ordered Polish, Old fashion wieners, Kielbasa, Hot Italian and Cajun so I hope they are as good. All will be smoked for around 2 hours and cure will be added. I will be making all using pork ,but a pork mix with any other meat should turn out fine. I feel that pork takes on flavor better then most other meats.

    We always do 50 percent pork mixed in with duck, goose or venison.

    I may try beef for the burgers this year but those aren’t smoked and just go on the grill.

    DANG!!! I haven’t made anything from them in a few years, that’s too bad – I really liked their stuff but have been mainly doing my own maple and kielbasa recipes lately, was just thinking of doing bacon again this year. I’ve heard P&S is good, I will maybe give them a shot.

    Anyway – back to topic – Yes, venison bacon is great!
