Been a while since I did a Turkey
Pastrami. I usually do it by feel following no particular recipe (the cure I stick to a dry rub) and it always turns out great.
Looking for tips to add to my randomness. Like injecting to other thoughts. Have a whole Turkey thawing ready to be deboned ounce thawed.
