    We smoked 14 fillets (7 channel cats).

    Boneless and skinless. Turned out good.

    That looks amazing! Fired up the smoker last night for a Digiorno pizza! Nothing better than smoked food, regardless of what it is.

    doah I knew better than to look at this post !!
    now I gotta take my GMG Davey Crockett with me to Bemidji this weekend.
    I guess I will have to try some smoked pike,panfish,and yes,even some walleye !!

    I could provide an endless supply of channel cats if you were willing to smoke em! I just want a few! waytogo

    10. No doubt. waytogo I’ve done these for years. It’s like candy. Some crackers and it’s good eating. I’m sure it’s awesome no matter how you eat it. I’m mostly a snack guy with this.

    I smoked some Shovelnose sturgeon a few weeks ago. Brined for 24 hrs in a Salt brine…….brushed a honey/brown sugar & hot water baste on them every half hour , after the first hour in the smoker, absolutely delicious.

    I did some as boneless filets with skin on, some as steaks with skin, backbone & bony exterior Plates intact & one as a whole fish with just the head, fins & guts removed………hands down, filets are the favorite and that’s the only way I will do them next tIme. Just like candy! Funny how many neighbors and relatives show up just as I’m taking them out of the smoker. They sure didn’t last long.

    Hmm. Sounds interesting doing the sturgeon, I’ve caught them before on the Mississippi river. Are those legal too keep on the river?

    I’ve never tried flathead catfish smoked. I assume those are good also smoked? Thanks.

    Shovelhead sturgeon, also called sand sturgeon , are legal to keep (south of red wing) on the Mississippi River. Limit of 10 and no size requirement. Lake Sturgeon ( the great big ones , are not legal to keep at all. Sand sturgeon are as good or better than smoked salmon. Also great batter fried.

    Got 5 nice channel catfish today, they are gonna be headed for the smoker soon. I don’t like them as well but filleted & smoked with that brown sugar / honey brine, they are worth the effort required to smoke them.
