I love spaghetti but sometimes it’s nice to have something cold for dinner in the heat of the summer. So tonight I made a new recipe! It’s delicious and full of veggies!
Summer Spaghetti Salad
Ingredients:
16 oz box spaghetti noodles
1 1/2 cups cucumber, sliced
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1/2 cup yellow bell pepper, chopped
2 cups cherry tomatoes, halved
1/4 cup chopped parsley
1/4 cup parmesan cheese, freshly grated
1 1/2 cups Italian Salad Dressing
Instructions:
~ Cook the spaghetti per package directions and aim for al-dente. Drain and rinse under cold water. Once drained, add them to a large bowl.
~ Add the rest of the ingredients, except parmesan cheese.
~ Pour the dressing over the pasta and vegetables, use as much as you like. Toss to coat. Taste and adjust for salt and pepper.
~ Sprinkle parmesan cheese on top and garnish with fresh parsley.
~ Serve or refrigerate, and enjoy!
