Soup with fish heads?

    It seems like fish heads have been used by everyone from native people all over the world to fancy french chefs, has anyone here done this?

    I’ve made fish stock from fish heads and used it in various fish chowders and bouillabaise. Tastes better than the clam juice that you buy in the bottle, but it takes a bit of work to filter all the scales out of it.
