    Talking Lake Sturgeon here.

    My Beliefs:
    I do not have a desire to keep a Lake Sturgeon.
    I do not have a problem with other people keeping a Lake Sturgeon legally caught.
    I have trouble keeping my mouth shut when I see a Lake Sturgeon that’s going to be released held by it’s gill plates or worse with a persons hand in the gills.

    Because “I” don’t have an interest in keeping a Lake Sturgeon, does that make me sound snobby?

    Its all on how you conduct yourself. Nothing wrong with trying to educate and assist people. Now, blowing chunks of Spam out of your mouth, spitting out Hamms, and screaming at someone that doesn’t know better puts you in a unique class

    Some have told me they are very good. Others have said the opposite. I had smoked Lake Sturgeon once last spring. I don’t know if it was the way it was prepared or just me… I couldn’t swallow it.

    I’ll see if I can locate a video to show how to clean one. I’ve never really paid much attention.

    The best way to hold a larger lake sturgeon (as with large walleyes) is to use two hands and support the mid section. When they get to be on the larger side I like to have them held in a lap as in the photos below. I’m not worried about the slime coating being rubbed off. If they die from a gill hold the slime means nothing.

    I have caught several, often snagged while fishing for walleye. This is the only one I have ever taken out of the water – just wanted a photo. My buddy helped carefully lift it out of the water. He quickly stepped out of the photo as fish started kicking and it was like one nice smooth action as it nicely went head first back into the water. Wanted to measure it, but never even got the chance. White marks on the side were there before I caught it.

    It was heavy – can’t imagine holding it by the gills.

    Can’t see why anyone would want to eat one either (my opinion). No one in my boat will ever keep one.

    Snob-NO, I don’t think so.

    They really are a resilient fish but like every living thing, not when the lungs are messed with.

    This is a White Sturgeon from out West.

    FYI not that many years ago there were only a couple sturgeon cleaning videos. Today there are pages!

    Best Sturgeon recipe, fillet 1 sturgeon and cut in to 1 inch chunks. Dice 10 lbs. yellow onions, 5 stalks celery, 5 lbs. baby carrots. Put it a large pot with 5 gallons chicken stock. Add salt and pepper to taste. Add 10 pounds of diced red potatoes with skin, add sturgeon cover and put large rock on top of pot. Boil for 45 minutes. When done throw away and eat rock.

    This can also be ade with SPAM instead of Sturgeon.

    I’ve kept two. They were very good smoked and just grilled. I’m sure as with anything they can be ruined by sloppy preparation.

    Now smoked shovelnose sturgeon is another story. Tasty!

    But I don’t like mushrooms either. )

    I’ve always been partial to this recipe.

    Ingredients
    sturgeon filets
    ribeye steak
    salt
    pepper

    Salt and pepper the ribeye. Grill ribeye on a hot grill to medium rare. Let rest for 5-7 minutes. Eat the steak with any sides you like.
