    Delivering dinner to some sick friends that have been quarantined. Hope they like smoked meatloaf and smoked beans with sausage.

    Oh My Goodness Dave, ??? you can’t serv that to sick people! The meatloaf is still raw on the outer edges!! See just how pinkish shock red it is! whistling

    I use regular cheese in mine too along with some other good stuff.

    2 lbs ground beef
    1 lbs ground pork
    1 small onion
    couple cloves of garlic
    2 eggs
    bread crumbs
    grated cheddar cheese
    1/2 + 1/2 cup bbq sauce (half in and half on top
    chopped pickled jalapenos – optional

    Smoked at 250 to an IT of 155 degrees.

    Mine is rather close to Dave’s.
    This is my general mix, coffee sometimes I’ll do this and do that, What ever!

    Denny O’s Meatloaf

    Meat mix;
    1 lbs ground beef
    1 lbs ground pork
    (1/1 or 2/1 beef to pork or 1/3rds beef, pork and lamb)
    Big blobbing of Lea & Perrins!
    1/2 a blob of low sodium Soy sauce!
    2 eggs beaten (1 egg/pound of meat)
    1/3 to 1/2 cup italian bread crumbs
    1tbs basil
    1tbs thyme
    Add other herbs that make you get all warm and fuzzy

    Veggie mix;
    Saute the following in butter till softened and reduced in size and drain grease/oils on a paper towel
    1 medium onion finely chopped
    6 to 8 cloves of garlic minced/riced
    6 oz small chopped favorite mushrooms
    1 to 3 stalk celery finely chopped
    IF you like add finely chopped red, yellow or orange bell peppers
    (Sometimes I’ll add some grated carrots and other veggies too)

    Assemble
    Mix the “Meat mix” with the “Veggie mix” then add grated or very small cubed sizes of your favorite yellow cheddar cheeses, be very liberal, some of the cheese ends up in the bottom of the pan and some is left in the loaf so, Don’t skimp!

    form a sticky wet loaf with a detendented top (to hold the topping) in a pan
    Smoke or heat in a 225 to 250 oven
    Add Denny O’s BBQ Swause mixed with ketchup and pure local honey, for a topping swause when the loaf reaches about 130 degrees IT. Baste all over the sides and pool the balance in the dented top of the loaf.
    After the topping swause is added,continue to heat till ihe IT temp reaches 155 to 160 depending on your USDA safety feeling.

    FDA safety note: USDA Internal Temperature requires a minimum of 160 degrees for ALL Ground meats Period! (your results may vary)

    This is my take on Dave’s wonderful meatloaf. His is Very worthy! peace YUM!

    Last weekend I made a meat log that is very similar to the meat loaf. The only thing I did different was flatten it, saute up some green peppers, onions, and mushrooms and placed that inside with some provolone cheese. Than rolled the whole thing up tight.
