    DROOL!! <nobr style=”font-size: inherit”>recipe</nobr> please !! toast

    pretty simple, my smoker i use for fish holds 8 fillets of 2-3 lb fish. biggest i put in are up to 4 lb fish then i cut back to 3 fish!

    brine is 2 qts water, 1 cup pickling salt, 1 cup sugar. then i add soy sauce, worshersire sauce and other seasonings like garlic salt, seasonall……..anything you want really.

    my smoker is a brinkman charcoal smoker. i dry the fillets then bake them in the oven at 250 for about 45 minutes…………throw them on the smoker till it quits smoking.usually use an old metal coffee can of hickory wood chips!!!!!!!!!

    I watched someone try Andy’s way once,the fish was still alive and it kept blowing the match out when it would flip its tail every time the match got close to it.

    what was the total time the fish stayed on the smoker? any idea what temp your smoker was running at?

    About 3 hours. No clue about temp. Like o said earlier I baked the fish at 250 for 45 minutes. It’s what I’ve done for 20 years. Even did salmon this way, my step dad said the smoked salmon stands in Alaska ain’t got nuttin on me!
