I cant help with a recipe but I can tell you that Smoked bullheads are one of the best smoked fish I have ever had. When I was young the DNR netted a ton of them out of a local lake and gave them away to locals. We got several 5 gallon buckets full of them. Did the cleaning and brining ( a Brown sugar one if I remember correctly ) Took them to Morey’s in Motley and they smoked them for us. By far one if not the best smoked fish ever.

I thought this post would have been form IowaBoy. Smoked bullheads are fantastic. My grandpa used to make it for me. I am not sure what he used for a brine. Most of the fish brines are very similar from what I can remember. Sorry I don’t have my recipe on hand.

In 1974 we took my dad’s smelt dip net and netted a 5 gallon bucket of bullheads out of a creek. We cleaned them and he smoked them. Salt enough to float an egg and then brown sugar but I don’t know how much. Smoked them in his little chief and served them at my older sister’s high school grad party. That’s why I remember the year. They were very, very good.
