I know it’s very dependent on current/river levels but what size sinkers would you have to start out fishing for Channels/Flatheads?

I use between 2 and 8 oz typically. I go back and forth between pyramid and no rolls. 2 to 5 is average

    Agreed.

Most cutbait action 3oz does me well. In general, whatever keeps ya pinned to bottom, but not to heavy where it’ll drag on a fish getting back to boat, plenty of snags along the way for bigger fish

What weight size would you use now on the Minnesota River?

If it’s like the Croix right now some spots I’m throwing 5 and some 3.

I feel you definitely depends a lot on the scenario.

2-4 oz on my local river. Cut bait seems to catch more current so I use more weight. Disc and pyramid sinkers. I do use a 1-2 oz barrel sinker when I slip bobber fish with live bait, or if its really slow current. Line diameter can affect what you need also.

There’s no right answer to this, changes day to day even spot to spot. That is why I use sinker slides. I can evaluate and easily change on the fly based on bait size and depth and current at each location.

I fish the MN a lot and I use Flat Bank sinkers and general size for cutbait I’m using 2-4oz and live bait 4-6oz. Even with the high water and massive amounts of current you can still find slack water areas an in fact that is what you WANT to find.

5 to 6 ounce size. I like my bait to stay where I cast, don’t think too large of sinker for most applications matters
