They are a great fight but you would be surprised if you ate one. The meat is firm and much like tuna. One of my buddies lives near lake mead and harvests them to can them and use in place of tuna. I smoke them out of clean waters and there is never enough when I bring it to a gathering.
I’d be interested in learning how you smoke them if you don’t mind sharing.

Fillet them out like a normal fish? Brine/seasoning?
