Putting up Tomatoes

    I got these straight tomatoes canned last week. This week I am making canned salsa with my next batch out of the garden. I can hardly keep up. Not bad for seven plants including all my neighbors and I can eat.

    i do 4 things with tomatoes. make salsa, juice, stewed tomatoes and with extras chop them up carefully in a food procceser and freeze them.

    i add the stewed tomatoes to chili and an old german thing i think is boil up noodles and add stewed tomatoes hence noodles and tomatoes, usually goes good with fish!!! i also use the juice for chili and when i make my spaggetti sauce, and drink it straight up. the rozen tomatoes i like to throw them in a few things along the way!

    about every 2-3 years i also use tomatoes to can a soup starter. that pretty much includes about anything from the garden all cooked together jarred and sealed.

    Goulash straight. Use it to make chili, spaghetti sauce. Normally just those 3 things.

    I have so darn many green tomatoes, anyone got any tricks to speed upthe ripening process!!!!!!!!
