Pumpkin Spice Bread

    I made some pumpkin spice bread to get into the Fall spirit tonight. I’m loving the crisp temperatures outside lately.

    Sharon’s Pumpkin Spice Bread

    3 cups sugar
    1 cup vegetable oil
    4 eggs, lightly beaten
    1 (16 oz) can solid pack pumpkin
    3 ½ cups flour
    1 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    ½ tsp baking powder
    ½ tsp ground cloves
    ½ tsp ground all spice
    ½ cup water

    In a large bowl, combine sugar, oil, and eggs. Add pumpkin and mix well. Combine dry ingredients, add to the pumpkin mixture alternately with water. Pour into two greased 9x5x3 loaf pans. Bake at 350 degrees for 65-70 minutes or until bread tests done. Cool in pan 10 minutes before removing to wire rack to cool completely.

    I buy two or three pie pumpkins each fall to make pie. Apart from the pie I don’t care for anything pumpkin. The bread looks good though. Pumpkin and zucchini are both over-done really.

    My son-in-law is a great scratch cook and always gets pie pumpkins each fall for pies too. Pumpkin bread is one of my all time favorites and can never seem to get enough of it. I think banana bread is over-done more than anything. Pumpkin and zucchini are seasonal.
