    I’ve done plenty of briskets but my supply has usually been choice cut. When I saw this prime cut at Costco I had to get it. What I noticed right off was the little amount of trimming that was required. I only had about a pound and a half of fat when it was fully trimmed and ready for rub. It got injected before going in the smoker about midnight. The injection is a beef broth and beef onion soup concoction. It was smoked fat cap down with a 1/4″ of trimmed fat capping the top side.

    And prime cut was definitely all that! Maybe my best brisket ever.

    Other particulars:
    14 lbs
    smoked at 235 and meat yielded at 195 IT
    Wood was Hickory, Apple and Plum

    When I want a guaranteed good steak I get Prime.

    Quality Grades:

    Prime grade is produced from young, well-fed beef cattle. …
    Choice grade is high quality, but has less marbling than Prime. …
    Select grade is very uniform in quality and normally leaner than the higher grades. …
    Standard and Commercial grades are frequently sold as ungraded or as “store brand” meat.

    Thanks for the post. I’ve been eyeing up the Prime Brisket at Costco as well and contemplating pulling the trigger on one.

    Loving all the secondary meals off of this. My lunch was garlic fries buried in chopped brisket.
