The local grocery store meat department throws out off cutts in a discount section and many times these cuts surpass traditional cuts of beef or pork.
This time I got this pork chop odd cutt. From first appearance there were many muscles in the cut with veins of fat.
With a short dry brine with a dry rub and sprinkle of brown suger and a spattering of soy sauce and a medium low fire on charcoal ramping up to hot the final result was out of this world. The cuts were absolutely moist and tender and soaked up the flavor of items added. Honestly these are the best cuts of pork I have had.
