    I didn’t have the right guests at Christmas so I’m getting my prime rib to start the new year.

    EVOO, salt, pepper, garlic powder, onion powder, thyme.

    We cooked one for Christmas then my wife picked this one up for a super ridiculous price, so we made another last night.

    Cooked a 12 pounder for the boys at the fire station on Christmas eve. Two and a half hours on the Weber with cherry wood, 117degs internal temperature, let it rest for 15 minutes. I was told it was the best prime rib they have ever had. I don’t like using salt in a rub as it pulls out to much moisture, but that’s just my opinion. Yours looks fabulous
