Never smoked fish before. Help please.

    My Dad went carp fishing and cleaned a few. He has asked me to smoke them. Smoked carp is not my favorite for the record. I have never smoked fish before. I assume the sides need to be brined, but I do not know. If anyone can provide any recipes or instructions please help. I have smoked all sorts of fowl and red meats, and am decent at it. But fish…….. I do not even know what kind of wood to use. I have a Masterbuilt electric smoker if this helps. Appreciate any assistance.

    Brine it first.
    I’d use 1 of the fish brines you can buy. Follow the directions. Easier than mixing your own.
    I like to spritz it with apple juice towards the last half of the smoke. Gives it a nice shine and a little sweetness.
    Brown sugar sprinkled over it is another option.
    Fruit wood to smoke with.skin down.
    Not sure of the time. I just play it by looks and texture.
    Carp is not my fav either but it’s not bad.

    rob- Make sure you take all the racks out of smoker that does not have meat on. Catch the dipping because if you don’t the smell will be in the meat of your next smoking jobs. I did two small fillet for grandson. I ended washing the inside of smoker. If you have a old smoker I would use that on if you can. Good luck!!
