I use prepared seasonings from Waltons but this is a recipe I have done and was taken from a sausage making cook book years ago. No too bad. For 25 pounds of meat blended as you like but roughly 3 parts pork with fat to 2 parts lean beef or venison.
1 cup powdered milk
1/4 cup salt, non iodized
5 tbls sugar
5 tbls paprika
2 tbls ground white pepper
5 tbls minced garlic
2 1/2 tsp ground marjoram
2 1/2 tsp ground thyme
2 1/2 tsp celery seed
2 1/2 tsp ground coriander
2 1/2 tsp ground nutmeg
pink cure for 25 pounds of meat….1 ounce to 25 pounds of meat
