My First Homemade Salsa

    Our garden exploded in roma and cherry tomatoes so I decided to have a go at making my first homemade salsa. It’s not bad! I just did a small batch to start with, then did a larger batch last night. There are about 7 cups of chopped roma and cherry tomatoes, most of a large onion, several super chili peppers and serrano peppers, two teaspoons of minced garlic, two tablespoons of olive oil, two large green peppers, and one bushel of fresh cilantro (… not parsley…) ah hem. whistling

    Billy has been really busy lately working on projects and the tomatoes weren’t going to wait. So I thought, why not? I’m not much of a cook but I’ll give it a try. I’m more of a baker and while I really enjoy baking, I’ve never been a fan of “cooking”.

    It was fun to experiment with ingredients and quantities. If we get more tomatoes I might try my hand at a small batch of homemade spaghetti sauce. I love spaghetti!

    That’s what I did last night! First time as well. Canned so we can store and eat all winter.
    Hope to run another batch next week so we have enough to share with friends.

    That looks much better than my first crack at it! I had cherry tomatoes and I roasted and then blended them up. Ended up resembling something in my daughters diaper…I used too much lime juice and that was about all I could taste.

    I cant keep up with my tomatoes. Definitely doing another batch next week.
    Based on first batch I plan to go less sugar and more heat. I’ll use an extra jalapeno and utilize some of their seeds this time. I hate to ruin by making it too hot but I gotta risk it.

    Thanks, Merican Eagle! I was happy with the results, and as my Dad’s testimony states – I’ve made a pretty good salsa!

    My Mom isn’t a huge fan of garlic, onions, or hot peppers. So she took a whiff of the salsa, made a sour face, and asked “Why would you make that??” jester
