Ralph, I grow it. Have the patch out at a friend’s place. Near regal. I’ve made lots of horseradish in my time, but I’ve never seen roots this big consititanlly. There huge.
Iowaboy… No recipe. Just what you see in the picture. Add salt to your liking. I put lemon juice in till I think there is enough. Add vinegar and mix it really good. I add vinegar till liquid almost runs threw a slotted spoon. You need to add vinegar mix and let it sit mix and add till it runs through the spoon.
There are 3 things I feel are most important. 1) dig clean and process same day. 2) it’s ok to wash the roots off but never keep it in the water all the time, AND, once it’s ground up let it set a good hour before you mix the liquid in

no, I did it in the garage, with doors open, but you need to be wary of where you stand
After I had it ground up, I let it set for an hour. Went to add the ingredients, took the lid off. Literally took my breath away . I have a towel over the grinder out spout and the pan it falls into. That’s a must

yes. It’s currently in the freezer now in a box. All the jars are upright. Later today I will put them. In brown paper bags, doubled up. And tape it tight.
Then put them in there corner of the freezer. Keeping them dark as possible. Keeps the horseradish nice and white longer?!!
