Lake Trout with Zucchini Salsa

    Made it out on Superior this weekend on a Team Crush Outdoors charter. Cpt Cameron runs a tight ship and a great time was had! Brought home a bunch of nice laker fillets. Spice rubbed (garlic powder, onion powder, cayenne, ancho chile powder, smoked paprika, s&p, and brown sugar on last), grilled and served with a fresh from the garden zucchini salsa and baked potato. Good stuff and the wife was a big fan too!

    Been having some serious stomache issues lately, and need to keep all meals to less than 15grams fat is about the number that works. In today’s world that’s freakin tough. Luckily had the freezer full of fish so been eating quite a bit of that lately, and might I say that meal looks freakin delicious. But needs to start switching it up, baked Panko only goes so far.

    Whats in the zucchini salsa?

    Peeled green and yellow zucchini, red onion, 2 jalapeno’s (no seeds/core), rice wine vinegar, lemon juice, s & p, and about 2 tablespoons of white sugar. Pretty easy, a little spicy for the wife but I really like it. Actually put it in my eggs this morning, and that was good too!
