    Smoking many meats and have a neighborhood party. Two 5# briskets salt and peppered, three pork butts seasoned, 5 racks of ribs, two pork tenderloins rubbed and grilled. Party starts around 2, food at 5, campfire til…..

    I didnt get that carried away today but I did manage to get these done today after a twenty four hour brine.

    If someone can make a better brisket than this was please let me know!!!! : no iodine salt and pepper rubbed on 5lb. brisket. Smoked at 225 for 4 hours fat side up sprayed with apple juice every hour, than wrapped in butcher paper and smoked an additional 4 hours at same temp. 75% cherry 25% hickory. It was super tender juicy and flavorful. Pictures tomorrow when I have better data for pictures. Best brisket I ever ate!
