    Practicing this weekend.
    Chicken chili is dialed in the only tweak is to back off on the heat, going from 1 tsp on cayenne to 1/2 tsp.
    Smoked chicken thighs, braised in chicken stock until they fell apart, then built the chili on top of that.

    The gold medal chili is quite a bit of prep. 2 hours of slicing, dicing, measuring.
    Just tasted it and the heat is perfect with the different layers.
    I forgot to get a bottle of IPA and ended up using an old bottle of Sam Adams Octoberfest. That will need to change for the competition.

    I have friends coming up this weekend to critique and will be taking a couple bowls up to the cook at the Channel to see what he says.

    There are too many IPAs to pick from. How do you pick? toast I have over 12 different ones in the beer fridge right now if you need to sample some. grin

    Update: 6 guys making chili and about 14 to coming taste test. So about 20 total so far!

    I was really thinking we’d have a bigger turn out. If you’re planning to come and haven’t let me know, please do so by replying to this thread, sending me a message on here, or text and FB too if you have those! All are welcome! An approximate head count will be helpful for making sure the chili cookers know about how much to make and that we have enough bowls and spoons!

    Looking forward to this and can’t wait to eat some chili! mrgreen mrgreen

    Only 10 days away!!

    Would someone be willing to bring some paper towels? Maybe just a roll or two? And we could use some assorted fixings – shredded cheese, Fritos, crackers, sour cream, etc – if someone could help with that too!

    My peppers didn’t make it in my garden. So last night I drove down to my brother’s house and a buddy’s house to raid their gardens. I have what I need. Thanks Sharon for taking care of all this. I am looking forward to winning the event jester , taking home the $250 cash prize, meeting James Holst and more IDOers. Hopefully a couple more people will join at the last second.

    Matt, that couple from Iowa making the bullhead chili isnt going to make it.
    Last I heard they test fired some of the chili while they were sitting on empty tin cans when the barrage began and the town folks thought they were being invaded by a thousand harleys with straight pipes.
    Twenty two deputies showed up to arrest them all but couldnt find a one of them.

    However, Sparklesonthewater and yours truly will be there!!
    If the 4 hour ride doesnt destroy my back we plan on stopping by your place to try out a couple of your mojito’s and maybe even one or three of your sangrias.

    Hope to meet that rootski fella and his beautiful daughter that has taken so much time to arrange this for everyone.
    As far as meeting that there Holst feller,,,,,well shucks, I guess you could call that a privilege !! Razzn ya James !!

    Question, I know someone said there will be power strips. What’s the power situation like at your average picnic shelter? I know I have to play circuit roulette in my kitchen if I need two or more plugged in at one time. Hope we don’t trip a breaker we cant access. rotflol

    Sharon said the power situation is not bad. I will be bringing 2x 50’ 12 awg cords and a power strip for each one. It sounded like we may not even need the cords.

    Weather looks perfect, but if there is a power situation, the gal gave me the green light to relocate the event to our house just miles away from there.

    Will also bring chili and a sampling of beers.

    Anyone bringing stink bait? Might be a catfish under that bridge!

    I didn’t realize that this is the same day that knotfest is going on. I will be down in Iowa at the slipknot show.
