deer sticks too greasy

    Was introduced to bow hunting this year, and got lucky. I have been super excited about having deer sticks in the boat. I got them back yesterday, and they are FAR from what I was expecting. They almost taste like a slimjim, which I cannot stand. Is there a way I can dry them out and make them actually taste like deer? Thanks!

    If they are really greasy its because there was to much beef or fat added to the meat.. I have made jerky sticks with lean beef before and it is very very greasy. I normally mix 1 pound ground chuck beef to 7 pounds venison and it turns out great. The only thing you may be able to do is throw it on a dehydrator and let it dry out a bit more but I would assume that unless you get it hard as a rock its just going to keep sucking out grease.

    In order to make them palatable you can try drying them out. I have done this to sticks that came back the same way. I used a dehydrator but lowest setting on the oven should work. Just dont dry them too far or they wont be good either. This is why we are constantly talking about good places to get sticks made. The really good places almost always put out a superior product.

    Place a 1/2 dozen on an open rack in the oven at 160 degrees for about 30 to 40 minutes minutes with a drip pan beneath them then test. Yopu may need a little more time or less, but do a sample before doing them all. As stated, be careful to not over cook/dry out. If that happens, they are worthless.

    Thanks gentlemen, I sincerely appreciate it. They tasted better today after being in the fridge. I laid them out on a paper towel this morning and a considerable amount of grease left the sticks! I may experiment with a few in the oven as well, thanks again. Yay! Deer!
