    Do you need to cook the fish before putting it in the jars.

    No cooking…but I would recommend freezing it for 24 hours before pickling…just to be safe.

    Mike, I was hoping I didn’t have to pull that thread up from the archives of IDA!

    I tried the whole liver pickling the liver saturday night I dont know about the liver but I was sure pickled

    cut into 1″ chunks, Layer fish in plastic container. cover with pickling salt. refrigerate for 48 hrs, seperate daliy.[fish kinda sticks together. Rinse and put back into container an cove with vinager for 48 hrs. drain this , then bring these to a boil 4 cups white vinager, 3 cups sugar, 1 cup water, 1 tsp whole cloves, 1tsp whole alspice, 1tsp crushed red pepper, 3 bay leaves, 2tsp pickling spice, 1tsp whole mustard, let cool, put fish in jars pour mixture over fish ,cover and refergerate. Its the best. The jars aren’t sealed so they have to be kept in the refer.

    I read in last months In-fisherman that you should freeze it for seven days to make sure the center freezes all the way. You want to make sure you get rid of those pesky tapeworms!

    Our new Attorney General has already said this is one of his major issues.

    Note that it is an ongoing poll from November of 2007. Looks like USA Today is waiting to publish the results hoping it will swing the other way.

    Or they were hoping for the opposite result and decided to “forget” about the poll when they saw how people really felt.
