I have all kinds of wild game cookbooks most with chile recipes but I almost always make the same chile probably because it is so easy.

    – 1 Lb ground Venison, browned
    – One can tomato juice
    – One can dark kidney beans, drained
    – 2 to 3 cups diced fresh tomatoes
    – One small onion, finely chopped
    – What ever chile seasoning you enjoy. I grind up a few chile’s or just use a store bought chile seasoning packet.
    – Water. I add enough (about 12 oz) to get the chile to the consistancy I like.

Throw everything in the crock pot and let it slow cook all day. Serve with shredded cheddar and crackers.

I do not use ground venison, I cube the meat. I also use a can of Rotel Italian or Mexican tomatoes and kiddney beans . Add tomato juice till you get the consistancy you like. Dont forget chile powder to taste and a big onion diced.Crock pot the soup all day and serve with cheese over the top. The venison chunks will melt in your mouth

Gary, you like chili? You should attend the Hudson Chili contest next year. I entered for the first time this year but have been attending for several. My friend won second place with pheasant chili this year. You get to eat all the chili you want for free and there are about 30 or so different kinds. Its a chili lovers dream come true. [censored] bar within sight of the Croix. Wonderfull late winter event.
